Cold Rooms and Refrigeration Units for Vapiano Restaurants
Vapiano operates a chain of restaurants and bars serving pizza, pasta and salads in Germany and the U.S. and are currently expanding into several countries in Europe, including Britain. Vapiano restaurants are casual with upscale decor and enable customers to have a quick and tasty meal or savour a few drinks from the bar and order food at their own leisure should they wish for a more relaxed pace.
The unique concept for their restaurants involves an element of self-service. Customers are given a microchipped card which they can use to order delectable made-to-order dishes from a variety of counters within the restaurant and bar. This servery style means each of their restaurants requires a number of chilled glass display cabinets for food.
Vapiano approached Caterware to supply refrigeration units and cold rooms for their new restaurants in the UK, and potentially further afield as well. In keeping with the elegant, modern design of the restaurants, they did not want the chilled food display cabinets to have any visible refrigeration equipment. The refrigeration unit would sit elsewhere, and cold air would be pumped from the unit into all of the chiller cabinets in the restaurant. Working with Vapiano's architect, Caterware designed and installed a remote refrigeration unit into the first UK location for Vapiano and will supply other UK locations as they expand.
Vapiano also asked Caterware to design and install cold rooms for refrigerated storage in their kitchens. We initially quoted for several sizes of coldroom. As the build progressed, the architect had to modify the specifications for the kitchen on the fly since the plans for the restaurant continued to change as work evolved. As a result, we had to work with him to change the specifications for the cold rooms as the plans for the kitchen continued to change. Luckily, we pride ourselves on our flexibility and our ability to work quickly and under pressure and we were able to deliver and install the required cold rooms to Vapiano on schedule so the commercial refrigeration in their kitchen met their exact specifications.
