Royal National Hotel
This three phase project in the heart of central London was a challenging time for all, working around existing equipment, the projects new wash up area, breakfast kitchen and breakfast servery offers the staff state of the art equipment to effortlessly serve high volumes of guest’s in a short space of time.
With a wash up area back of house designed to cope with large amounts of crockery cutlery and glassware a Meiko DV200.2 double basket machine was recommended to work in conjunction with existing units, new s/s tabling was designed with banks of basket on the outlet section for storage and collection. An inlet section with a roller section speeds the process of moving baskets through the wash cycle.
The breakfast kitchen having a Rational 20 grid combination oven with a suite of Falcon Dominator fryers, grills, griddles and boiling tops produced the efficient breakfast kitchen the client required for quick turnaround of freshly prepared food.
Finally the front of house servery countering all manufactured to be mobile as the breakfast area doubled as a function room for certain parts of the day, this giving the hotel the flexibility to use one or all pieces elsewhere, all units having Quartz Caeserstone tops the main servery made up of bain marie section plate dispense section, toast warmer units removable and till unit. An Island section for cereal and beverage, using Marko Bulk brewing machines, milk dispensers made sure guest’s perfectly brewed coffee and tea and chilled milk.
