Kitchen Design and Kitchen Installation for Ping Pong
Ping Pong operates many modern dim sum restaurants around London. They serve a range of Chinese specialty teas, fresh juices and mouthwatering cocktails to drink alongside the most gorgeous dim sun you will find anywhere in the UK. Dim sum is the Chinese version of tapas, where diners order a range of small portions of steamed, baked, grilled or flash fried foods to nibble while sipping a kumquat Mojito or a refreshing cup of jasmine tea.
Ping Pong, who already had seven existing restaurants approached Caterware because they realised that in order to cope with their plans to grow the chain throughout the UK, it was time to analyse the operational and equipment requirements for their kitchen and in order to establish a format where the brand could be rolled out systematically and cost-effectively over the next few years while maintaining the same high standards in their restaurant kitchens. It was also important to Ping Pong that a system for regular kitchen equipment maintenance and repair should be put in place.
A complete review of their restaurant kitchens was carried out by Caterware alongside a dedicated team of Ping Pong personnel in which each item of catering equipment was assessed for its suitability. We quickly realised that in order to meet their exacting requirements, specialist dim sum steamers and refrigerated storage units for dim sum baskets which would improve their cooking process, would have to be sourced and manufactured bespoke, especially for them as these items were not currently available within the catering equipment marketplace.
Caterware arranged to have the dim sum steamer and the refrigerated storage units manufactured to Ping Pong's bespoke requirements and included these items within their generic kitchen equipment layouts and specifications. Once this was completed, Caterware continued negotiations with commercial kitchen equipment suppliers on behalf of Ping Pong to establish highly competitive purchasing prices which we fixed for the foreseeable future.
Whilst planning all of the above, Caterware completed an upgrade to Ping Pong's existing Central Production Unit which was designed to run in tandem with the restaurant kitchens.
With all the design and equipment specifications completed, Caterware proceeded to work alongside the Ping Pong contract management personnel and contractors to bring all existing restaurants up to the required standard. We installed the first two new restaurant kitchens for Ping Pong in March 2008, making sure that every detail was perfect so as to maximize the efficiency by ensuring that they would only need to make use of their kitchen equipment service contract with us for the scheduled routine maintenance. Eight further new restaurant projects are now being undertaken throughout 2008 with another 14 already planned for 2009.
With their newly designed dim sum steamer and their bespoke restaurant kitchens, Ping Pong are now fully able and committed to grow their empire and continue to constantly produce their "little steamed parcels of deliciousness" within a busy, fast-moving environment throughout the UK and abroad.
