Kitchen Design and Cafeteria Design for Greig City Academy

Greig City Academy is a comprehensive school with independent status sponsored by The Greig Trust and the Church of England. Working closely with Greig City Academy to fully understand the needs of a busy school, Caterware designed a deli and food servery area to cope with the catering requirement to serve high volumes of hurried students quickly and efficiently.

Greig City Academy cafeteria designWe installed an Angelo Po Alpha suite in the main kitchen area with 8 burner ranges, solid tops, bratt pans and Angelo Po Combistar ovens which we believe are perfect for cooking high volumes of freshly-prepared, healthy food to suit the eclectic tastes of the students and teachers. The Combistar ovens in particular will enable kitchen staff to cook a variety of dishes for large numbers of people and will help to reduce wastage and conserve energy. Combistar ovens are unique in the way that they operate. They preserve moisture in the food so chefs need to use less fat in dishes cooked in a Combistar oven, making food from an Angelo Po Combistar oven healthier overall.

With the large numbers of students eating at once, Caterware had to design a system to cope with the quantity of trays coming in for warewashing all at once. We took care in installing drop-off and collection points for dirty trays which would facilitate traffic flow through the cafeteria and would prevent the sheer number of dirty dishes from overwhelming kitchen staff and causing disorder in the warewashing area.

Working closely with key members of staff at Greig City Academy, including the catering manager, enabled Caterware to really understand the way in which meals are prepared in their kitchen and the ways in which students use the cafeteria. As a result, we delivered exactly what they needed from their kitchen and dining hall.
